Sometimes even great images make the cutting room floor! This photo was originally shot for the cover of the winter issue of Table Magazine (http://www.tablemagazine.com). Unfortunately the previous cover had been a dark image and the team felt two dark images in a row might be too… dark. Spite its beauty, this image hit the floor. Peel and cut into 1cm sticks Place in a bowl, sprinkle 1 tablespoon salt, and mix Pour in just enough hot water to cover (1h) Drain and rinse in cold water and dry Deep fryer (125°C) Fry the potatoes for 4 to 6 min. or almost tender Drain in the basket and place on a baking sheet Heat the oil to 184°C in preparation for a quick double fry Fry the potatoes briefly to crisp them but not colour the outside Remove from the oil, allow the oil to heat up again to 360°F Fry them one last time until crisp Pat them and sprinkle with salt
